Oatmeal Applesauce Cookies

UAMS healthy recipe oatmeal applesauce cookies

Nonstick cooking spray
1 ½ cups rolled oats
1 cup unbleached all-purpose flour
½ tsp. ground allspice
¼ tsp. baking soda
¼ tsp. salt
6 Tbsp. margarine
1/3 cup Splenda
1/3 cup light brown sugar
1 egg white
½ cup unsweetened applesauce
½ cup seedless raisins, chopped

Preheat the oven to 375oF. Spray a large baking sheet with nonstick cooking spray. In a large bowl, combine the oats, flour, allspice, baking soda, and salt, and set this aside. In another bowl, beat the margarine, splenda, and brown sugar until creamy. Reduce the speed to low and add egg white, mixing until combined. Alternately, add the flour mixture and the applesauce until just combined. Fold in the raisins. Drop by level tablespoonfuls onto the prepared baking sheet. Bake for 15-17 minutes until the edges are lightly browned. Cool and serve.
